Abstract
Consumers are increasingly choosing plant-based dairy substitutes, driven by a growing health awareness, environmental concern, and ethics. Such products have evolved beyond mere dairy substitutes to being functional foods with high levels of healthy nutrients such as antioxidants, fiber, protein, and omega-3s, as found in soy, almond, oat, and coconut milks. They provide considerable health benefits, reducing the risk of lifestyle diseases such as cardiovascular disease, lactose intolerance, and obesity, and supporting bone health and digestion. While there has been progress in improving their taste and nutritional quality, some challenges remain, such as finding the ideal texture, flavor, and nutritional equivalence with conventional dairy and satisfying regulatory requirements for health claims. In addition, sustainable sourcing and packaging are also imperative. Going forward, all these alternatives will be at the forefront of functional nutrition, and with sustained innovation and cooperation, can overcome the present constraints and meeting the increasing demand for healthy, sustainable foods is possible.
