Abstract

The structure of the eosin-caseine complex has been studied by the triplet label method. Quantitative data are obtained on the quantum-mechanical exchange interaction between the eosin centres and the external quenchers. The dynamics state of the water-protein matrix has been studied in the interval from -21 to -180 °C using eosin as a fluorescent and phosphorescent label and also the natural protein chromophores - tryptophan residues.
