Abstract

Vapour pressures of saturated aqueous solutions of D(+)-glucose, D(+)-galactose, and β-lactose were determined in the temperature range (278 to 323) K using an electronic hygrometer with an electrolyte sensor, and were compared with literature data. The water activities and osmotic coefficients at the saturation point were evaluated from the determined vapour pressures at T = 298.15 K.
